Making carrot soup from scratch is unbelievably easy, and once you've learned the basics, there's no limit to the fun flavour combinations you can try.

Ingredients
  

  • 2 pounds carrots peeled and chopped
  • 1 medium yellow onion peeled and chopped
  • 3 - 4 cups vegetable or chicken broth
  • pinch salt to taste
  • pinch black pepper to taste

Instructions
 

  • Add all ingredients except salt and pepper to a soup or stock pot.
  • Bring to a boil and simmer for about 30 minutes.
  • Turn off the heat and let the soup cool down.
  • Puree the soup until smooth. This can be done with an immersion blender right in the pot or in a standard blender. Be careful if your soup is still hot.
  • Give your soup a taste and add salt and pepper if desired.

Carrot Soup Variations

Once you master the basic carrot soup recipe you can start playing with flavours. Herbs, fruits, veggies and spices can all be delicious options to amp up the flavour of your soup.

  • Roast your veggies at 375 degrees for 20 – 25 minutes with a sprinkle of salt and olive oil. This will add a lot of flavour to your soup. If you are roasting your veggies, reduce the simmer time to about 15 minutes before pureeing your soup.
  • Try adding some dried herbs to your soup. Use your favourite herb or combination or herbs, just be sure you don’t exceed 2 teaspoons total to achieve a nice balance of flavour. Digs suggests 1 tsp of dried thyme and ½ tsp dried tarragon. Some other options: dill, sage, chives, savory, parsley, lovage or bay leaves.
  • After pureeing your soup add ¼ cup of heavy cream or 1 14oz can of coconut milk and stir in. This will go very nicely with dried herbs but is also great on its own to add richness and a creamy texture.
  • If you love garlic try adding 3 – 4 cloves of garlic to pot when simmering the veggies.
  • 1 tbsp of fresh chopped ginger add a lovely dimension of flavour.
  • A peeled chopped apple, pear or sweet potato added during simmering adds a nice subtle sweetness to the soup.
  • Top your soup with a drizzle of olive oil and freshly chopped chives or green onions.
