Digs' Guide To Carrot Soup
Making carrot soup from scratch is unbelievably easy, and once you've learned the basics, there's no limit to the fun flavour combinations you can try.

- 2 pounds carrots peeled and chopped
- 1 medium yellow onion peeled and chopped
- 3 - 4 cups vegetable or chicken broth
- pinch salt to taste
- pinch black pepper to taste
Add all ingredients except salt and pepper to a soup or stock pot.
Bring to a boil and simmer for about 30 minutes.
Turn off the heat and let the soup cool down.
Puree the soup until smooth. This can be done with an immersion blender right in the pot or in a standard blender. Be careful if your soup is still hot.
Give your soup a taste and add salt and pepper if desired.
