Digs’ Plant-Based Chocolate Pudding

This twist on the traditional, beloved classic treat is just as dreamy and creamy as the original but it’s all plant-based!

Plant-Based Chocolate Pudding Ingredients

Made with simple ingredients, this chocolate pudding is a cinch to make ahead and save in the fridge for a delicious snack or dessert. The coffee helps to enhance the flavour of the chocolate but you can leave it out.

Digs’ Plant-Based Chocolate Pudding

Dreamy and creamy plant-based chocolate pudding

  • 2 cups plant based milk (almond is recommended)
  • 4 tbsp cocoa powder
  • 3.5 tbsp corn starch or arrowroot powder
  • 1 tsp ground coffee
  • 1/8 tsp sea salt
  • 1.5 tsp vanilla extract
  • 3 tbsp dark chocolate chips
  1. In a small to medium sized saucepan, add all ingredients except vanilla and chocolate chips. Whisk until cornstarch dissolves completely, and only then turn on the heat.

  2. Bring to a boil over medium heat, whisking continuously.

  3. Once the mixture starts boiling, turn the heat to low and whisk for another 60-90 seconds. The pudding will start to thicken.

  4. Remove from heat. Add vanilla and chocolate chips and mix until smooth.

  5. Pour into ramekins or jars and refrigerate for 2-3 hours to set. Add a sprinkle of sea salt or chocolate shavings and enjoy!
