Digs' Plant-Based Chocolate Pudding

Dreamy and creamy plant-based chocolate pudding

Ingredients
  

  • 2 cups plant based milk almond is recommended
  • 4 tbsp cocoa powder
  • 3.5 tbsp corn starch or arrowroot powder
  • 1/2 cup coconut sugar
  • 1 tsp ground coffee
  • 1/8 tsp sea salt
  • 1.5 tsp vanilla extract
  • 3 tbsp dark chocolate chips

Instructions
 

  • In a small to medium sized saucepan, add all ingredients except vanilla and chocolate chips. Whisk until cornstarch dissolves completely, and only then turn on the heat.
  • Bring to a boil over medium heat, whisking continuously.
  • Once the mixture starts boiling, turn the heat to low and whisk for another 60-90 seconds. The pudding will start to thicken.
  • Remove from heat. Add vanilla and chocolate chips and mix until smooth.
  • Pour into ramekins or jars and refrigerate for 2-3 hours to set. Add a sprinkle of sea salt or chocolate shavings and enjoy!
