Made with simple ingredients, this chocolate pudding is a cinch to make ahead and save in the fridge for a delicious snack or dessert. The coffee helps to enhance the flavour of the chocolate but you can leave it out.
Digs' Plant-Based Chocolate Pudding
Dreamy and creamy plant-based chocolate pudding
Ingredients
- 2 cups plant based milk almond is recommended
- 4 tbsp cocoa powder
- 3.5 tbsp corn starch or arrowroot powder
- 1/2 cup coconut sugar
- 1 tsp ground coffee
- 1/8 tsp sea salt
- 1.5 tsp vanilla extract
- 3 tbsp dark chocolate chips
Instructions
- In a small to medium sized saucepan, add all ingredients except vanilla and chocolate chips. Whisk until cornstarch dissolves completely, and only then turn on the heat.
- Bring to a boil over medium heat, whisking continuously.
- Once the mixture starts boiling, turn the heat to low and whisk for another 60-90 seconds. The pudding will start to thicken.
- Remove from heat. Add vanilla and chocolate chips and mix until smooth.
- Pour into ramekins or jars and refrigerate for 2-3 hours to set. Add a sprinkle of sea salt or chocolate shavings and enjoy!
