Cucumber Boats
These delicious, healthy, easy-to-assemble boats make for a great, zero-waste school lunch or a quick after-school snack. They come together in a flash, they're packed with veggies, and they're easily customizable with different spices or garnishes so everyone can sail to flavourtown on the cucumber boat of their choice!

  • 1 can Raincoast Trading Skipjack Tuna (142 g)
  • 1/4 cup chopped carrots
  • 1/4 cup chopped celery
  • 1/4 cup chopped broccoli
  • 3 tbsp greek yogurt
  • 1 tbsp mayonnaise
  • 1-2 english cucumbers
Options for garnish
  • fresh parsley chopped
  • sweet paprika

  • 1/4 cup chopped broccoli

  • 1-2 english cucumbers

Instructions
  1. Cut the cucumbers in half lengthwise, and seed them.
  2. Combine the tuna, carrots, celery, broccoli, yogurt, and mayonnaise together in a bowl, and mix well.
  3. Add optional garnish, and enjoy!
