Ingredients

  • 18 - 20 cups cold water
  • 4 pounds chicken necks, feet and/or wings
  • 3 carrots, chopped
  • 3 stalks celery, chopped
  • 2 - 4 cloves garlic, peeled and smashed
  • 1 - 2 medium onions
  • 1 bay leaf
  • salt & pepper to taste

Instructions

  • Place all ingredients, including water, into a slowcooker or a big pot on the stove.
  • Bring to a simmer.
  • Simmer covered for 24 - 48 hours, occasionally skimming fat. If needed add more water.
  • Remove the big pieces of solids from the broth.
  • Strain the broth to remove the remaining solids.
  • Let the broth cool to room temperature, cover and refrigerate.

Notes

  • You can use less than 4 pounds of chicken but we like to keep the bones to water ratio high for a lovely gelatinous and collagen-rich broth.
  • You can add more garlic for an additional immune boost.
  • Store the broth in the fridge for one week or freeze for up to 3 months.
  • Homemade broth can be used in soups, stews and more!
