Watermelon, Cucumber and Feta Salad
Honey Vinaigrette
- 3 tbsp honey
- 3 tbsp lime juice
- 2 tbsp extra-virgin olive oil
- pinch of salt
- freshly ground black pepper (to taste)
Watermelon Salad
- 2 lb watermelon (peeled, cubed)
- 2 English cucumber (cubed)
- 1/4 cup fresh basil leaves (torn)
- 1/4 cup fresh mint leave (torn)
- 1/2 cup crumbled feta cheese (preferably goat’s milk or sheep’s milk)
- 1/2 purple onion (sliced)
- In a small bowl, whisk together honey, lime juice, olive oil, salt, and pepper. Set aside
- In a large, combine watermelon, cucumber, purple onion and fresh herbs
- Add veinaigrette and gently toss. Top with fetal cheese.
