Watermelon, Cucumber and Feta Salad

Honey Vinaigrette

  • 3 tbsp honey
  • 3 tbsp lime juice
  • 2 tbsp extra-virgin olive oil
  • pinch of salt
  • freshly ground black pepper (to taste)

Watermelon Salad

  • 2 lb watermelon (peeled, cubed)
  • 2 English cucumber (cubed)
  • 1/4 cup fresh basil leaves (torn)
  • 1/4 cup fresh mint leave (torn)
  • 1/2 cup crumbled feta cheese (preferably goat’s milk or sheep’s milk)
  • 1/2 purple onion (sliced)
  1. In a small bowl, whisk together honey, lime juice, olive oil, salt, and pepper. Set aside
  2. In a large, combine watermelon, cucumber, purple onion and fresh herbs
  3. Add veinaigrette and gently toss. Top with fetal cheese.
